Introduction :-In South Asia, there is a nation called Pakistan. Afghanistan, China, India, and Iran are its neighbours, and it has a coastline that runs along the Arabian Sea and the Gulf of Oman. With the Thar Desert in the east and the Hindu Kush and Pamir mountain ranges in the north, Pakistan's landscape is diversified.

Nihari is the national food of Pakistan and also popular dish in South Asia, particularly  India, that is said to have originated in the Mughal era. The Mughal emperors were known for their lavish feasts and their love for rich, flavorful dishes. Nihari is believed to have been created by the chefs of the Mughal emperors as a hearty and filling dish that could be enjoyed by the royal family and their guests.


The word "nihari" comes from the Arabic word "nihar," which means "morning." It is said that the dish was traditionally eaten by laborers and workers in the morning to give them energy for the day ahead. Over time, nihari became a popular dish among all classes of society and is now enjoyed by people all over South Asia.


The dish is typically made with beef or lamb that is slowly cooked in a flavorful broth with a blend of spices, including cinnamon, cardamom, cloves, and bay leaves. The meat is cooked until it is tender and falls apart easily, and the broth is thickened with flour or cornstarch to create a rich, velvety texture. Nihari is traditionally served with naan bread or roti, and is garnished with fresh ginger, cilantro, and lemon wedges.


Nihari has evolved over time, with different regions and cultures adding their own unique twists to the recipe. In Pakistan, for example, it is often served with a side of spicy pickles or chutneys, while in India it is sometimes made with goat meat instead of beef or lamb. Despite these variations, nihari remains a beloved dish throughout South Asia, and its rich history and cultural significance continue to be celebrated today.


Here's a recipe for beef nihari that serves 4-6 people:

Nihari 



Ingredients:

- 2 lbs beef shank, cut into small pieces

- 1/2 cup vegetable oil

- 2 onions, sliced

- 3 garlic cloves, minced

- 1 inch ginger, grated

- 2 tomatoes, chopped

- 2 tbsp nihari masala (spice mix)

- 1 tsp cumin seeds

- 1 tsp coriander powder

- 1/2 tsp turmeric powder

- 1 tsp red chili powder

- Salt to taste

- 3 cups water

- 2 tbsp flour

- Chopped cilantro leaves, fresh ginger, and lemon wedges for garnish


Instructions:


1. Heat the oil in a large pot over medium-high heat.

2. Add the sliced onions to the pot and sauté for 5-6 minutes until they are soft and golden brown.

3. Add the minced garlic and grated ginger to the pot and sauté for a minute.

4. Add the chopped tomatoes to the pot and cook for 5-6 minutes until they are soft and mushy.

5. Add the beef shank pieces to the pot and cook for 5-6 minutes until they are browned on all sides.

6. Add the nihari masala, cumin seeds, coriander powder, turmeric powder, red chili powder, and salt to the pot and stir well.

7. Add the water to the pot and bring it to a boil.

8. Reduce the heat to low and cover the pot. Let the nihari simmer for 3-4 hours until the beef is tender and the broth is rich and flavorful.

9. In a small bowl, mix the flour with 1/2 cup of water to make a smooth paste. Add this paste to the pot and stir well. Cook for another 10-15 minutes until the broth is thickened.

10. Garnish with chopped cilantro leaves, fresh ginger, and lemon wedges. Serve hot with naan bread or roti.
