Ingredients:

- 2 cups basmati rice

- 500g chicken, cut into pieces (you can also use lamb or beef)

- 2 onions, finely chopped

- 4 cloves of garlic, minced

- 2 tomatoes, diced

- 2 carrots, diced

- 1 bell pepper, diced

- 1 tablespoon Kabsa spice mix (a blend of spices including cardamom, cinnamon, cloves, black lime, and others)

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 2 tablespoons vegetable oil

- Salt, to taste

- Fresh cilantro or parsley, for garnish


Instructions:

1. Rinse the rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.

2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and cook until they become translucent.

3. Add the minced garlic and cook for another minute until fragrant.

4. Add the chicken pieces to the pot and cook until they are browned on all sides.

5. Add the diced tomatoes, carrots, and bell pepper to the pot. Stir in the Kabsa spice mix, ground cumin, and ground coriander. Cook for a few minutes until the vegetables start to soften.

6. Add enough water to cover the chicken and vegetables. Bring the mixture to a boil, then reduce the heat to low and simmer for about 30 minutes, or until the chicken is cooked through and tender.

7. While the chicken is cooking, bring a separate pot of salted water to a boil. Add the soaked and drained rice to the boiling water and cook until it is about 70-80% cooked. Drain the rice.

8. Once the chicken is cooked, remove it from the pot and set it aside. Add the partially cooked rice to the pot with the remaining liquid and vegetables. Gently mix the rice with the liquid, being careful not to break the rice grains.

9. Cover the pot and cook on low heat for about 15-20 minutes, or until the rice is fully cooked and fluffy.

10. Serve the Kabsa on a large platter, placing the cooked chicken pieces on top of the rice. Garnish with fresh cilantro or parsley.
